In her novels, Agatha Christie stated that English people love having afternoon tea. In 1657, an advertisement in London Mercurius Politicus Newspaper introduced tea to English society for the first time. It stated tcha or tee, a Chinese drink that can heal various illnesses.

As tea has a long history, it has proved itself as a popular drink in the world. Catherine of Braganza, a Portuguese who married King Charles II in 1662, promoted tea as a daily drink. In 1664 East India Company, an English trade partnership brought tcha or tee and then as known as tea from Java.

From the 1700s to the beginning of 1800, English noblemen and noblewomen ate two times, namely at breakfast and dinner. They also had a light lunch. As dinner time was late time by time until 19.00 or more, there was a light snack and a cup of tea as the drink. 

In the middle of 1700, China as the main tea exporter also introduced tea to English society. Because high delivery fee, just English noblemen or noblewomen purchased it.

They wore beautiful gowns, gloves, and hats.

Different from afternoon tea, high tea is a tea-drinking tradition by English employees. Usually, they do it from 17.00 to 19.00 because they feel starving when they go home at 16.00 to 17.00 after working hard. Because dinner time is still in a few hours, they have some cups of tea and meat pies which are enough satiate.

The food provided in a high tea is harder than food in an afternoon tea. There are some slices of bread, cheese, and various salads on the dining table. That high tea term comes from the height of the dining table which is higher than tea-table or coffee-table.

Oolong tea is a semi-oxidized tea that has a sweet flavor from grassy green to nutty fruity. Around 1,000 years ago there was Ancient Tea Route or Tea Horse Road which distributed tea bricks and cakes by horses from Pu erh City to Bengal, Burma, Tibet, and Central China. Pu erh tea has 2 types, namely raw and ripe.

Green tea 
Green tea originates in China in 2737 BC. At first, it was just consumed by the highest tiers of Chinese society. In 1400 it was consumed publicly as medicine and refreshment. During that time, there was Cha Jing (The Classic of Tea) by Lu Yu who described green tea culture and art. As green tea is non-fermented tea, it maintains natural substances in its leaves. It has the benefit of high antioxidants for health and anti-aging. Green tea has some varieties consisting of Longjing tea, Biluochun tea, Majian tea and so on.

Flower tea 
Flower tea has various types consisting of Osmanthus, Chinese jujubes, Bozhou fungyuan large grain semen cassia tea, water hibiscus, lavender, jasmine, rose, and so on. Flower tea is wonderful for anti-aging. Yet, make sure you don't suffer from any allergy to the flower.

Black tea 
Black tea is an oxidized tea of Camellia Sinensis Sinensis and Camellia Sinensis Assamica. It has the characteristics of black tea, red soup, red leaves, and a sweet taste. The tea farmers in the Wuyishan tea area of Fujian during the Ming Dynasty in China invented the world’s first black tea. The leaves were darker because of the oxidation process by the sun. To create Lapsang Souchong (one of the first black teas), the leaves are also smoked over pinewood to accelerate the drying process. Besides lapsang souchong, the main varieties are jin jun mei and dian hong tea.

Recipe of Honey Lemon Black Tea

Ingredients:
1 glass black tea (0.5 tsp black tea and 1 glass of hot water)
2 tsp lemon juice
2 tsp honey
Lemon slice

How to make:
1. Add honey and lemon juice to a glass of black tea.
2. Add slice of lemon.
3. Ready to drink.
